Biteofthebakes’ Mini Egg Cookie Easter Nests

METHOD

  Preheat your oven on gas mark 5 / 190 °C and grease the doughnut moulds.

  Add the unsalted butter and caster sugar to a bowl and cream together until fully incorporated. Add in the plain flour, cornflour, baking powder, bicarbonate of soda, salt , Cadbury Mini Eggs and Cadbury Dairy Milk and mix.

  Add in your eggs and vanilla and mix until a cookie dough has formed! Your dough should be coming together in clumps but still “shaggy” and start coming away from the bowl.

  Weigh the cookies out into 9 balls, roughly 100g each. Press into a silicone doughnut mould and put them onto a baking tray. Bake the cookienuts for 10–12 mins.

  Once baked, allow to cool completely before removing from moulds and decorating.

  Melt your chocolate spread in a bowl and dip your cookienuts upside down into the melted chocolate and swirl off the excess chocolate. Place onto a baking tray and sprinkle over crushed flake chocolate.

  Chill your decorated cookie nests in the fridge. Once chilled, place 3 Cadbury Mini Eggs in the middle.
